Sometimes, the stars align, creating a special resonance leaving one inspired, energized, and humbled.  Such was the case in Busan, Korea, during World Barista Championship this May where Finca Deborah, through the hands of the most talented Baristas in the world, swept the podium, placing first, second, and third in espresso course, a first in the history of the world's most prestigious coffee event. 

The Savage Coffees Trinity Series; ELIPSE, NIRVANA, and TERROIR, encompass the spectrum of extraordinary flavor. Each Geisha coffee with its own unique process, expression, and character, deliver an unforgettable kaleidoscope of complexity, and elegance elevating the one's impression of what Fine Coffee can be. The Trinity Series is a collection of these three coffees. 

Grown and processed by Jamison Savage and the Savage Team in Volcan, Panama on the acclaimed, Single-Estate, family owned, Finca Deborah.

Savage Coffees will offer the Trinity Series through the Savage Coffees Roastery in St. Petersburg, Florida where Jamie and Peter Savage will roast these special coffees in the Trinity Series. This is a rare opportunity to enjoy what the most experienced judges in the world have ruled to be the finest coffees on earth.

First Place; ELIPSE - Natural Nitrogen Macerated Washed Finish Deborah Geisha, a hybrid process Jamison pioneered and perfected through many years of alternative anaerobic experimentation.

Flavor notes - Lychee, Raspberry, Grapefruit, Plumeria Flower

Second Place; NIRVANA - Natural Nitrogen Macerated Deborah Geisha. A spectacular fruit forward demonstration of production and processing prowess.

Third Place; TERROIR - Classic Washed Deborah Geisha. The Queen of Geisha coffee and the consummate example of what Legendary Producer Jamison Savage considers his Masterpiece.

Water

Water makes up to 99% of brewed coffee. It’s important to use only fresh, filtered, and soft water to fully extract flavors & keep your equipment reliable for years.

  • Total Dissolved Solids: 70-120 ppm, pH = 7.0
  • General hardness level <4°dH
  • Brewing temperature: 94-96°C / 201.2-204.8°F
  • Use filtered or low mineral-content spring water

Drip brewing

Always rinse the paper filter in your brewer with hot water prior to extracting SAVAGE coffees.

Dose: 60-65 g of coffee per 1 liter of water
Ratio: 1:15 coffee-to-water
Extraction Time:
• Pour Over: 2:45 – 3:45 min.
• Batch Brewer: 3:30 – 4:30 min.

Espresso Brewing

Always flush the group head before extraction.

Grind: Fine | Dose: 19-21 g | Yield: 50-55 g | Time: 24-27 s

Tip: We recommend using precision baskets & shower screens for optimal extraction.

Our Process

Jamison Savage and Finca Deborah are synonymous with coffee excellence around the world.

Over the last decade, Jamison’s coffees have won countless National Barista and Brewer Cup Championships, have been showcased in Michelin Star restaurants, acclaimed hotels, and celebrated in the best roasteries and cafe’s from Paris to Los Angels, Shanghai, to Dubai.

Seoul, Korea recently hosted the 2024 World Barista Championships. The results of the most prestigious annual coffee event made history with Finca Deborah Geisha coffees sweeping the podium, placing 🥇🥈🥉

This marks the second WBC victory when, in 2016, Jamison’s Finca Deborah coffee was used to win the WBC, Dublin, Ireland.

On the heels of this momentous event, Savage Coffees is pleased to announce the Trilogy Series, a 100gr each, three pack collection of the 2024 WBC podium sweeping coffees available to you, ANYWHERE IN THE WORLD.

Judged at the highest levels of the Specialty Coffee industry, and convincingly proving themselves on the world stage, these three gems have earned the title of the World’s Finest Coffees.

We’re very excited to share these coffees in the Trinity Series and hope to spread the joy of Fine Coffee with those interested in enjoying a transcendent coffee experience.
