Processing Method:
Horizon undergoes a yeast-inoculated natural process, followed by a washed finish, involving:
- Selective Harvesting – Only the ripest Geisha cherries are hand-selected at peak maturity to ensure optimal sugar content and flavor potential.
- Yeast-Inoculated Fermentation – The whole cherries are placed in hermetically sealed tanks, where a carefully selected yeast is introduced. This fermentation enhances complexity by developing vibrant fruit tones, floral aromatics, and a refined acidity.
- Washing Process – Unlike traditional naturals, after fermentation, the cherries are depulped and washed before drying, creating a cleaner and more structured profile while maintaining fruit intensity.
- Drying – The beans are slow-dried on shaded, three-tiered African raised beds, a method to preserve the intricate flavors and ensure stability.
