Lot traced from tree to roast. Farm, elevation, process and roast date are printed on the card inside the box.

Whole cherries go into sealed tanks under nitrogen, ferment for roughly two days, then get washed and dried. The nitrogen keeps oxygen out, which keeps the cup clean while the fermentation builds the fruit and the florals.

This is the lot Mikael Jasin used to win the 2024 World Barista Championship. Same farm, same harvest, same processing as the coffee that was on stage.

We roast twice a week and ship the same week, so your bag arrives days off the roaster rather than months. Keep the box sealed, at room temperature, away from light. Drink it within six weeks of the roast date printed inside.

Free US shipping on orders over $100. Orders placed before a roast day ship that week. If something arrives damaged or isn’t right, email the roastery and we’ll make it right.

Clean, floral, and sweet all the way down.

Red apple and blood orange up front, jasmine through the middle, a touch of cinnamon on the finish. It’s the most approachable coffee in the Anthology series: complex enough to study, easy enough to drink every morning.

Elipse is great. Really beautiful coffee that opens with great florality, delicious acidity and a nice aftertaste. Letting this rest, you def get the red apple. I also got some great bergamot notes as it was hot. Again, just a beautiful coffee, one you sit with and enjoy.

The self sealing bag opened up while we were away for a few days. It wasn’t the first time and I blame myself for not contacting you when it first happened but I thought it was my error …… apparently it wasn’t and the bad sealing mechanism must be faulty. The coffee didn’t get a fair shake because it did lose some aroma during the time the bag was open for approximately five days. Perhaps I’ll try again but hope that your packaging is more consistent.

Hand crafted legacy

Grown by us, 1,900 meters up.

Finca Deborah sits in cloud forest above Volcán, Panama. We planted it in 2008, we pick it, we ferment it ourselves, and we roast it in Florida. Nobody else handles this coffee.
